Instant coffee
Progress in science and technicians has presented to fans of coffee an innovation — instant coffee. Occurrence of tinned instant coffee has been met differently. At one it at once was recognized, as allowed to prepare a favorite drink even when for this purpose there were no conditions necessary before. Others, on the contrary, have met new coffee with doubt, believing that to it is far to advantages of coffee of "present".
Meanwhile, instant coffee — a product remarkable in the true sense of the word. It prepare from the best grades of the natural coffee which strong infusion is carefully filtered, and then it is sprayed in the big chambers filled with inert gas, for example, by nitrogen. Droplets «that extract dry up directly hurriedly, turning to the small granules easily dissolved in water and forming in it a colloidal solution. For preparation of a drink from such powder it is enough to have near at hand only hot water.
The powder of instant coffee keeps high flavoring qualities freshly ground coffee as together with caffeine and aromatic substances — the essence forming "bouquet" of coffee, in an extract pass and then surface-active substances — stabilizers of colloidal particles remain in granules. Covering particles and the smallest oil droplets protective adsorption with a layer, these stabilizers don't allow to them to be aggregated and drop out in a deposit. Thanks to stabilizers, the drink prepared from a powder of instant coffee, has higher dispersion, than the coffee welded from ground grains, and at all doesn't give a deposit. Thus, it is possible to assert safely that instant coffee by its correctly put manufacture is better "usual" — anyway, in it all is more full used valuable that contains in the fried coffee grains.
