What's in the Box: Third Wave Water, El Guayaquil and Bombe Hamasho

This month we have a gift for our subscribers, a packet of Third Wave Water (TWW)! What is TWW? Well, it gives you the perfect water for brewing coffee when shaken into a gallon of distilled water. It is simply minerals (magnesium sulfate, calcium citrate, and sodium chloride) to be added back into water that has no minerals. Coffee is 98.5% water so it is important! The water chemistry plays a big role in how a coffee is extracted and how its flavor is perceived. If your water is too soft and it can mute the acidity, if it is too hard it can make the flavors harder to distinguish. Give it a shot and compare it to your home water set up!

Evaristo Neyra’s farm in Peru

Coffee that tastes like sticky buns, anyone? That’s right—with sweet notes of pecan, butter, brown sugar, chocolate, and baked red apple, El Guayaquil from Peru is an approachable everyday drinker. 

You may remember having Evaristo Neyra’s coffee last year. He grows Pache and Caturra varieties at 1850 meters above sea level at El Guayaquil, then pulps and ferments the coffee before washing and drying it on raised African beds. 

Since it was established in 2019, the Alpes Andinos group has focused on improving specialty coffee quality all while emphasizing social inclusion and environmental protection with organic farming methods. We have been tasting their coffees since their beginnings, and they are continuing to produce really nice coffees.

The aromas alone will fill your senses and leave you wanting more thanks to the award-winning producers at Daye Bensa’s Hamasho Washing Station in Ethiopia’s beautiful Bombe Mountains. This is grown at extremely high elevations of 2300 meters above sea level. We can’t get enough of this coffees delicate characteristics.
