What's in the Box: Colombia La Victoria and Ethiopia Guji Shakiso

We’re welcoming in July with two outstanding coffees in this month’s box! To start, we have our first Ethiopia, a washed Guji coffee. This is a perfect summer coffee and ideal if you like to brew iced coffee. We highly recommend trying it brewed hot, and then flash chilled over ice. Start out with a 1:10 ratio with a slightly finer grind, and use enough ice so it doesn’t all melt! 

The second coffee, Colombia La Victoria, is an old friend around here, making its fifth appearance! This is a delicious, everyday drinker–put it in the hopper and forget about it.

Guji Shakiso

This is our first Ethiopia of the new harvest season, coming to us from Guji Shakiso! And it’s a very special washed lot, as it was fermented with a specific strain of yeast in between the pulping and the washing step. Utilizing yeast is growing in popularity as it helps to control the fermentation and sometimes bump the coffee's score up slightly. It has also been found to increase the green coffee's shelf life. This is especially beneficial to us because while we are roasting this quite fresh in the beginning of the season, the coffee itself has already taken a long journey from Ethiopia to make its way here. 

This coffee was processed at Biru Bekele’s washing station in Odo Shakiso kebele, where elevations are 1750 - 2050 masl. There were 45 contributing outgrowers behind this lot who delivered their cherry to the station. Once the coffee was washed, it was dried on raised beds for 16 days. The end result–after taking it for a spin in the Loring–is a cup of coffee with fresh peach, bright lemon, juicy raspberry, and floral honey, yum! It’s the quintessential summer coffee, and the rumor is that it tastes even better with shades and flip flops on!

Whatever it is, the way you tell your story online can make all the difference.

Hands down, La Victoria is the best group lot coffee we buy from Colombia. This is an area home to many old varieties like Caturra and Typica, making for a better cup quality. Because this area is more remote, it is rare to find farmers growing newer varieties with lower cup scores (Castillo and Variety Colombia). In the cup itself, be on the lookout for a lot of chocolate sweetness with a bright and balanced acidity–think cherry and raisins. This lies right in the middle of the spectrum, not too heavy and chocolaty, but also not too fruity and delicate. 

It’s our fifth consecutive year offering this coffee from this group of producers in Santa Maria. La Victoria represents the higher scoring coffees, all blended together, from these small to medium sized producers. These are lots that were too small to separate out on their own as micro lots, but the quality is still very much there.
