What's in the Box: Colombia El Triunfo and Honduras Washed Alto De Los Santos

Early December was a whirlwind in the roastery, and while we got your coffees out to you I missed the blog. Well, I am back with a single origin box update! This month we have our first Colombia micro-lot of the season, one that we have been serving for 5 years. We also have the counterpart to the Honduras Honey we sent out last month, this time it is the washed process version from Finca Alto De Los Santos. Happy new year everyone!

Word-of-mouth led Audon Solano to our export partner’s buying station in Santa Maria, a short distance from where Audon lives. This relationship is going on 6 years and has enabled Audon to continue pouring love and hard work into his farm. The end result? Fantastic coffee.

Audon’s hard work and creativity shines through El Triunfo. It’s fermented for 24/36 hours—first, it’s fermented in cherry for 24 hours, then de-pulped and fermented for an additional 36 hours. This two step fermentation process gives some extra complexity to the cup! We pick up a bright and citrusy acidity with a great balance, notes of brown sugar, strawberry, and orange. We truly believe this is one of the best coffees out of Colombia and that is why we keep bringing it back, we are going on five years now roasting El Triunfo!

Alto De Los Santos

The washed processed version of Alto De Los Santos features a more sugar browning profile than the honey processed version. We taste notes of toffee, caramel, raisin and fig. Alto De Los Santos is a medium-sized farm in Copan, Honduras. Herminio Perdomo and his family produce exceptional coffee here!
