Sombra del Volcan is a regional lot from Antigua, Guatemala, an area surrounded by volcanoes and valleys where smallholder farmers grow coffees in shaded areas at 1500-1600 meters above sea level—varieties include Bourbon, Caturra, and Catuai varieties. Farmers then take their cherry to the central wet mill at the foot of Volcan de Agua to be processed. The high altitudes bring a cooler climate, and the rich volcanic soils create a coffee with a crisp citric acidity, creamy body, lots of deep chocolate notes, and a clean finish. We taste that dark chocolate along with plum and cinnamon.
